Nav Bar Sub Menu

I have a nav where there are pages that also have sub pages beneath them. The menu doesn’t open to show the pages beneath, so in the example below. Books and Periodicals both appear with a > before it, but do not expand into the subitems.

What configuration setting do I need to adjust to do this?

The Navigation Bar stack supports one parent-level and one child-level. You’ve got pages nested deeper than that it seems in your project.

So, the max levels down I can go is one child page but not below that? Am I correct?

Yes, with the Navigation Bar stack that is the limit. If you need more levels you might check out the Slide Navigation.
