I know that if you add child pages to the parent stack it becomes a placeholder so cannot click through to that page (that’s OK!), but can somebody tell me how I name the parent page/folder etc? SEO?
Does it appear in the sitemap?
Any info would be grateful

It will indeed appear in the Site Map stack, but Site Map has you covered there… You can enable this feature in Site Map:
This will make the Parent Link unclickable in the Site Map stack as well.

I personally just use a blank HTML or Styled text page myself.
