Hello

How do I do a simple sign up form, I tried to use the form pro stack but there is no way to toggle some entries or do I need a special sign up stack for that?

for newsletters or promotional mailing, but could not create one with the form stacks

The Form and Form Pro tools are meant as contact forms, and do not integrate with a database. You will want to use a service for something like that, something like MailChimp or a similar tool.
